The New Jedi Order

The Jedi order in the prequels had a lot of problems. Such as why everyone didn't believe in them when the whole freaking event was ten years ago, how Old Ben wasn't an eyesore in the wastes basically wearing an "I I love you Jedi" T-Shirt everywhere he went, or how the force seemed like a background skill while sabres were all the rage, and most importantly how they were NOT space wizards! It is time we imagined the Jedi order as they were meant to be imagined.

Step One: Even though the Clone wars were obviously only at max 20 years before the movie, why does everyone seem to think their some ancient religion?
Step Two: The Combat style of Jedi, Who would have used a Sabre vs. who would have exclusively used the Force. (appearance as well, Uniforms or such)
Step Three: How does training and Joining and such work, how does the cult work. Same with the Sith.
Step Four: Make sure never to contradict the fact that their space wizards!
Step Five: Bask in the Glory of a true space wizard organization!

As for why nobody knew about them, perhaps a look at the rangers in the Ranger's Apprentice Series could help us figure this out. Rangers were the guardians of the Kingdom (Jedi protected the Republic for Thousands of Generations...), but they did so from the shadows more or less. Most people believed them to be sorcerers (although they wouldn't have been wrong with Jedi) and feared them because of it. Maybe the Jedi Order is the same, a benevolent organization protecting from the shadows kind of, that the average smuggler (*cough* Han *cough*) would have only heard of, but probably never have seen or maybe even believed existed. It doesn't really help ancient yet, but it does cover how they could have been right in the clone wars and still some people would not have believed in their existence.

On a side note, are the Sith ever mentioned in the OT, as if their not that could also open quiet a bit of possibility.

As far as I can tell, the word "Sith" is never uttered in ANH, TESB, or RoTJ, not in any of the title crawls, nor by any of the characters. Only in the notes and stage direction do we find, in all three movies together, just under a dozen instances of "Sith."
